Tasty Tuesday

Blue Cheese Pecan Crackers - You will want to stuff your cheeks with this mouth-watering appetizer.
If you are asked to take an appetizer to a party - this is the one to take! 
Easy and delicious~


Blue Cheese Pecan Crackers 
Ingredients:
1/4 pound (1 stick) unsalted butter (softened)
8 ounces blue cheese, crumbled
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 large egg beaten with 1 tablespoon water for egg wash
1/2 cup roughly chopped pecan (or walnuts will work)

Directions: Preheat oven 350 Cream the butter and blue cheese until smooth. On low speed, mix in the flour, salt and pepper and mix until it is in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.

Place dough on floured board, press it into a ball, then roll into a 12-inch long log. Brush log with egg wash. Spread pecans on a cutting board and roll the log back and forth in the pecans, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 min.

Cut log into thin crackers on a cookie sheet lined with parchment paper. Bake 23 minutes until lightly browned. Rotate cookie sheet once during baking. Cool and serve at room temperature.
